We’re having a run on scones right now, so much so that we’re having trouble keeping them in stock. Our cinnamon honey scones are quite delicious, but what makes them different? We start by making a cinnamon honey paste, that we freeze and then cut into little 1/4 cubes to knead into the scone dough at just the right time. Then, as soon as the scones are the perfect golden color, we pull them from the oven and glaze them with a little wild clover honey and ghee while they’re hot. As they cool, the flavor deepens. Delicious! 😋

Firstly, we use wild blueberries, and make sure they stay all throughout the muffin (they don’t sink to the bottom), then we cut the sugar by half of a traditional muffin recipe and substitute it with a combination of wild clover honey and boot strap molasses. Finally, our yummy streusel topping made with finely ground almond flour and butter sends them over the top. Seriously, they are delicious. We like ours either before they’ve cooled completely, or slightly warmed in the microwave for 30 seconds. Mmmmm….
