Farmhouse Minestrone

Patullo House Farmhouse Minestrone

One large onion, diced

6 cloves of garlic, chopped

Olive Oil

48 oz chicken broth

29oz can of cannellini beans (or fresh if you have them), rinsed

15 oz can of tomato sauce (or fresh if you have it)

4 large carrots, peeled and sliced

One head of celery, trimmed and sliced

Several cups of fresh green bean, cut

20 small baby creamer potatoes

1 1/2 teaspoons salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

3-4 ounces of pastini



Saute the onion and garlic over medium heat until translucent, then transfer to instapot. Put all ingredients except the pastini into an instapot, and set for 30 minutes. Adjust your preference level of vegetables, to your own taste. When the soup has cooked for 30 minutes (or whenever you can get to it—set it to keep warm so you are not rushed!), release the steam, remove the lid, and add the pastini. Replace the lid and let the pastini cook in the liquid for at least 20-30 minutes.

Remove the lid and stir before serving. Store any leftovers in the fridge in an airtight container.

Serve with warm bread, and some parmesan cheese.
